Pomegranate Coconut Mousse
Ingredients
2 cups unsweetened Pomegranate Juice
3 tsp agar agar powder
¼ cup raw honey
½ tsp alcohol free vanilla extract
2 cups coconut milk
4 Tbsp unsweetened coconut flakes
¾ c. pomegranate arils
Instructions
Pour ¼ c of the pomegranate juice in a bowl and sprinkle the agar agar powder on the top
Mix the remaining pomegranate with the honey and bring to boil
Add the boiling mixture to the previously made mixture and mix well
Simmer the mixture for a while, and then allow it to cool to room temperature
Add the vanilla extract and coconut milk and keep refrigerated for half an hour
Mix well by hand or blend, once it is starting to thicken
Top with pomegranate arils and coconut flakes
Serve
